Refreshing and juicy, if we consume them at the beginning of meals, in salads as we propose today, they help us to digest the rest of the food much better, by accelerating the production of gastric juices. In a mortar we mash up the avocado until a paste is formed, add the rest of the ingredients and mix well. Right at the time of serving we season the salad and finish off by &nbsp;decorating it with the fresh coriander leaves.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" loading=\"lazy\" width=\"1722\" height=\"1722\" src=\"https:\/\/diariodeestilo.es\/wp-content\/uploads\/2021\/03\/FRUTAS-2.jpg\" alt=\"\" class=\"wp-image-42921\" srcset=\"https:\/\/diariodeestilo.es\/wp-content\/uploads\/2021\/03\/FRUTAS-2.jpg 1722w, https:\/\/diariodeestilo.es\/wp-content\/uploads\/2021\/03\/FRUTAS-2-300x300.jpg 300w, https:\/\/diariodeestilo.es\/wp-content\/uploads\/2021\/03\/FRUTAS-2-1024x1024.jpg 1024w, https:\/\/diariodeestilo.es\/wp-content\/uploads\/2021\/03\/FRUTAS-2-150x150.jpg 150w, https:\/\/diariodeestilo.es\/wp-content\/uploads\/2021\/03\/FRUTAS-2-768x768.jpg 768w, https:\/\/diariodeestilo.es\/wp-content\/uploads\/2021\/03\/FRUTAS-2-1536x1536.jpg 1536w, https:\/\/diariodeestilo.es\/wp-content\/uploads\/2021\/03\/FRUTAS-2-1140x1140.jpg 1140w, https:\/\/diariodeestilo.es\/wp-content\/uploads\/2021\/03\/FRUTAS-2-80x80.jpg 80w\" sizes=\"(max-width: 1722px) 100vw, 1722px\" \/><\/figure>\n\n\n\n<p><strong>Fruit and goat\u2019s cheese salad with mustard and honey vinaigrette<\/strong><\/p>\n\n\n\n<p><strong>Ingredients (for 4 people):<\/strong><\/p>\n\n\n\n<p>&#8211; A handful of green shoots per person (I have used arugula, red chard, baby spinach and red battalion, but serve any mix of salad sprouts that you will find in all shopping centres).<\/p>\n\n\n\n<p>&#8211; An orange without the skin cut into very thin wedges or small pieces.<\/p>\n\n\n\n<p>&#8211; A sliced pear.<\/p>\n\n\n\n<p>&#8211; About 75g or so of goat\u2019s cheese.<\/p>\n\n\n\n<p><strong>For vinaigrette:<\/strong><\/p>\n\n\n\n<p>&#8211; 4 tablespoons of <strong>EVOO (Extra virgin olive oil).<\/strong><\/p>\n\n\n\n<p>&#8211; 1 tablespoon of Sherry vinegar.<\/p>\n\n\n\n<p>&#8211; 1 teaspoon of old-fashioned mustard.<\/p>\n\n\n\n<p>&#8211; 1 tablespoon of honey.<\/p>\n\n\n\n<p>&#8211; Salt and freshly ground pepper.<\/p>\n\n\n\n<p>&#8211; A handful of toasted corn (crunchy snack ones) slightly chopped. It gives it a very interesting crunchy touch.
